Prepare the Potatoes
Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-15 minutes or until tender. Drain and set aside.

Prepare the Red Sauce
In a pot, boil the tomatoes and dried guajillo chiles in 2 cups of water for about 10 minutes until softened. Remove from heat and let cool. Once cool, blend the tomatoes, chiles, garlic, onion, and chicken broth until smooth. Add cumin and black pepper, blending until combined.
Cooking the Chilaquiles

Fry the Tortillas
Cut the corn tortillas into quarters. Heat the vegetable oil in a large skillet over medium heat. Fry the tortilla pieces in batches until golden and crispy (about 2-3 minutes). Remove and drain on paper towels.

Combine with Sauce
In the same skillet, add the prepared red sauce and bring to a simmer. Add the fried tortilla pieces and gently toss to coat them with the sauce. Cook for about 2-3 minutes until the tortillas are softened but not mushy.

Add Potatoes
Fold in the boiled potatoes into the chilaquiles mixture and gently mix. Allow to heat through for another minute.

Serve the chilaquiles hot, topped with crumbled cotija cheese, sliced avocado, a dollop of sour cream, and chopped cilantro.
