Dough Preparation

    Boil the Mixture

    In a medium saucepan, combine 1 cup of water, 1 tablespoon of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

    Add Flour

    Once boiling, remove the saucepan from heat and add 1 cup of all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool slightly, then add 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.

Coating Preparation

    Mix Cinnamon Sugar

    In a shallow dish, combine 1 cup of granulated sugar and 2 teaspoons of ground cinnamon. Mix well and set aside.

Frying

    Heat Oil

    In a large, deep skillet or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Dough

    Transfer the dough to a piping bag fitted with a star tip. Carefully pipe 4-6 inch long strips of dough into the hot oil, cutting them with scissors.

    Fry Until Golden

    Fry the churros in batches, turning occasionally, until they are golden brown and crispy, about 2-4 minutes. Remove them from the oil using a slotted spoon.

    Coat with Cinnamon Sugar

    Immediately roll the hot churros in the cinnamon sugar mixture until fully coated.
