Sauce Preparation
- 1
Roast the Ingredients
In a skillet over medium heat, add the tomatoes, onion (halved), garlic cloves (unpeeled), and dried arbol chiles. Roast for about 10-12 minutes until the tomatoes are charred and the onion is translucent.
- 2
Blend the Sauce
Remove the roasted ingredients from the skillet and let them cool slightly. Peel the garlic and add all roasted ingredients to a blender with vegetable broth, salt, and cumin. Blend until smooth.

Fry the Tortillas
In a separate large skillet, heat the vegetable oil over medium-high heat. Cut the corn tortillas into quarters and fry them in batches until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
- 5
Combine Tortillas and Sauce
Once all the tortillas are fried, return them to the skillet and pour the prepared red sauce over them. Toss gently to coat the tortillas evenly with the sauce.
- 6
Serve the Chilaquiles
Serve the chilaquiles hot, topped with sliced avocado, crumbled cotija cheese, fresh cilantro, and a squeeze of lime juice.
