    In a skillet over medium heat, add the tomatoes, onion (halved), garlic cloves (unpeeled), and dried arbol chiles. Roast for about 10-12 minutes until the tomatoes are charred and the onion is translucent.

    Blend the Sauce

    Remove the roasted ingredients from the skillet and let them cool slightly. Peel the garlic and add all roasted ingredients to a blender with vegetable broth, salt, and cumin. Blend until smooth.

    Cook the Sauce

    In the same skillet, heat olive oil over medium heat. Pour in the blended sauce and simmer for about 10-15 minutes, allowing it to thicken slightly. Adjust salt to taste.

Chilaquiles Assembly

    Fry the Tortillas

    In a separate large skillet, heat the vegetable oil over medium-high heat. Cut the corn tortillas into quarters and fry them in batches until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
