Chilaquiles Preparation

Prepare the Tortillas
Cut corn tortillas into triangles. Heat vegetable oil in a large skillet over medium heat. Fry the tortilla triangles until they are golden brown and crispy. Remove them from the oil and drain on paper towels.

Cook the Chicken
In a separate pot, boil chicken breast until fully cooked (about 20 minutes). Shred the chicken using two forks and set aside.

Make the Sauce
In a blender, combine tomatoes, onion, garlic, green bell pepper, chicken broth, red chili powder, cumin, salt, and pepper. Blend until smooth. Pour the mixture into a saucepan and cook over medium heat for about 15 minutes, or until the sauce thickens slightly.

Combine and Serve
In a large serving dish, layer the crispy tortillas, shredded chicken, and pour the sauce over everything. In another skillet, cook the eggs to your preference (scrambled, fried, etc.). Serve the chilaquiles topped with eggs, beans, and diced potatoes. Garnish with cilantro and a dollop of sour cream.
