Prepare the Flank Steak

    Marinate the Steak

    In a bowl, combine the flank steak, olive oil, garlic powder, cumin, salt, and black pepper. Rub the mixture all over the steak. Cover and marinate in the refrigerator for at least 30 minutes.

    Preheat a grill or skillet over medium-high heat. Grill or sear the marinated flank steak for about 6-7 minutes on each side or until cooked to your desired level of doneness. Remove from heat and let it rest for 10 minutes before slicing.

Make the Sauce

    Prepare the Tomatillos

    Remove the husks from the tomatillos and rinse them under cold water. Place them in a pot with enough water to cover and boil for about 10 minutes until softened.

    In a blender, combine the boiled tomatillos, fresh cilantro, jalapeño, lime juice, and salt. Blend until smooth and adjust seasoning to taste.

Assemble the Enchiladas

    Warm the corn tortillas in a skillet or microwave to make them pliable. This will help prevent them from tearing during assembly.

    Fill the Tortillas

    Slice the rested flank steak into thin strips. Take a tortilla, fill it with a few strips of steak and a sprinkle of shredded cheese. Roll it up tightly and place it seam-side down in a baking dish.
