    Cut the beef chuck roast into large chunks and season with salt. Set aside.

    Remove the stems and seeds from the dried guajillo and ancho chiles. In a skillet, toast the chiles lightly over medium heat until fragrant. Transfer chiles to a blender.

    Add garlic cloves, cumin seeds, oregano, black peppercorns, lime juice, and 1 cup of beef broth to the blender. Blend until smooth, adding more broth if necessary.

    Pour the marinade over the beef chunks in a large bowl. Mix well to coat all the pieces. Cover and refrigerate for at least 2 hours or overnight.

    In a large pot, combine the marinated beef, the remaining beef broth, water, sliced onion, bay leaves, and jalapeño. Bring to a boil over medium-high heat.
