    Rinse and drain the black beans. In a medium bowl, mash the beans slightly with a fork, leaving some whole for texture. Add cumin, garlic powder, salt, black pepper, and chili powder to the beans and mix well.

    Grate the cheddar cheese using a cheese grater and set aside.

    Lay a tortilla flat on a clean surface. Spread a quarter of the bean mixture over half of the tortilla. Sprinkle a quarter of the grated cheese over the beans, then fold the tortilla over to create a half-moon shape.

    Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes until golden brown. Flip it carefully and add the remaining olive oil if needed. Cook the other side for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.
