Meatballs

Method

Meatballs Preparation

  1. 1

    Prepare the Meat Mixture

In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, minced garlic, chopped onion, parsley, salt, and black pepper. Mix thoroughly with your hands until well combined.

  2. 2

    Form the Meatballs

With your hands, shape the meat mixture into small balls, approximately the size of a golf ball. Place them on a baking sheet lined with parchment paper.

Cooking the Meatballs

  1. 3

    Brown the Meatballs

In a large skillet over medium-high heat, add a bit of olive oil. Once hot, carefully add the meatballs in batches, cooking until they are browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside.

Sauce Preparation

  1. 4

    Sauté the Aromatics

In the same skillet, add 2 tablespoons of olive oil. Add the minced garlic and chopped onion, cooking until they are soft and fragrant, about 3-4 minutes.

  2. 5

    Add Tomato Sauce

Stir in the tomato sauce, chicken broth, cumin, paprika, salt, and black pepper. Bring the mixture to a simmer.

  3. 6

    Combine Meatballs with Sauce

Once the sauce is simmering, carefully add the browned meatballs back into the skillet. Cover and let cook on low heat for 20-25 minutes, allowing the flavors to meld.

Serving

  1. 7

    Garnish and Serve

Once cooked, sprinkle with chopped fresh parsley for garnish. Serve the albondigas with rice or crusty bread for a complete meal.
