Method

Preparation

  1. 1

    Prepare the Peppers

Wash the fresh poblano and jalapeño peppers thoroughly under running water. Gently dry them with a clean towel.

  2. 2

    Roast the Peppers

Using a grill or broiler, roast the peppers until the skins are charred and blistered all around, about 10-15 minutes. Turn occasionally to ensure even roasting.

  3. 3

    Peel the Peppers

Once roasted, place the peppers in a bowl and cover with plastic wrap or a damp cloth. Let them steam for 10 minutes. This will help loosen the skins. After steaming, peel the skins off carefully.

  4. 4

    Remove Seeds

Cut a slit down the side of each pepper and carefully remove the seeds and membranes without tearing the peppers.

Filling Preparation

  1. 5

    Make the Filling

In a medium bowl, combine the cream cheese, shredded cheddar cheese, chopped cilantro, garlic powder, ground cumin, and salt. Mix until well combined and smooth.

Stuffing and Frying

  1. 6

    Stuff the Peppers

Using a small spoon or piping bag, fill each roasted pepper with the cheese mixture until they are well-stuffed.

  2. 7

    Heat the Oil

In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 8

    Fry the Peppers

Carefully place the stuffed peppers in the hot oil and fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan.

  4. 9

    Drain and Serve

Once fried, remove the peppers from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot.
