Prepare the Chiles
In a dry skillet over medium heat, toast the dried guajillo and ancho chiles for about 2-3 minutes until fragrant. Remove from heat and soak the chiles in hot water for 15-20 minutes until softened.

Blend the Sauce
Drain the soaked chiles and place them in a blender. Add the garlic cloves, onion, cinnamon stick, bay leaves, salt, and black pepper. Pour in 1 cup of beef broth and blend until smooth.

Cook the Meat
In a large pot or Dutch oven, add the beef chuck roast and brisket. Pour the blended sauce over the meat and add the remaining beef broth. Bring to a simmer over medium heat, then cover and cook on low heat for about 3-4 hours until the meat is tender and easily shredded.

Prepare the Tortillas
In a skillet over medium heat, lightly toast the corn tortillas on both sides until warm and pliable.

Place a generous amount of the shredded meat on one half of each tortilla. Top with shredded cheese, diced onion, and chopped cilantro.

Fold the tortillas over to create a taco. Serve with lime wedges on the side for squeezing over the tacos.
