Carne Asada

Method

Marinating the Carne Asada

  1. 1

    Prepare the Marinade

In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

  2. 2

    Marinate the Steak

Place the flank steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cooking the Carne Asada

  1. 3

    Preheat the Grill

Preheat your grill to high heat.

  2. 4

    Grill the Steak

Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness is achieved. Let it rest for 5 minutes before slicing.

Assembling the Enchiladas

  1. 5

    Prepare the Tortillas

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.

  2. 6

    Fill the Tortillas

Slice the grilled carne asada into thin strips. Place a few strips of carne asada in the center of each tortilla, sprinkle with shredded cheese and chopped onion.

  3. 7

    Roll the Tortillas

Carefully roll the tortillas around the filling and place them seam-side down in a greased baking dish.

Baking the Enchiladas

  1. 8

    Top with Sauce and Cheese

Pour the red enchilada sauce over the rolled tortillas, ensuring they are fully covered. Sprinkle the remaining cheese on top.

  2. 9

    Bake

Preheat the oven to 350°F (175°C) and bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.

Serving

  1. 10

    Garnish and Serve

Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with fresh cilantro before serving.
