Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat, and sear the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.

Cook the Mushrooms
In the same skillet, add another tablespoon of olive oil and add the sliced mushrooms. Sauté until browned and tender, about 5 minutes. Season with salt and pepper.

Prepare the Brussels Sprouts
In a separate pan, heat a tablespoon of olive oil over medium heat. Add the halved Brussels sprouts and sauté until crispy and tender, about 8-10 minutes. Season with salt and pepper.

Make Citrus Aioli
In a bowl, combine mayonnaise, lemon juice, minced garlic, and a pinch of salt. Mix until smooth.

Assemble the Dish
Slice the seared chicken and place it on a plate. Top with sautéed mushrooms, crispy Brussels sprouts, pico de gallo, caramelized onions, and crumbled queso fresco. Drizzle with citrus aioli.
