Trim and halve the Brussels sprouts, slice the mushrooms, and chop the onion.

Grill the corn on medium heat until charred, about 10-15 minutes. Once cool, cut the kernels off the cob.

In a skillet, heat some oil over medium heat, add sliced onion and cook until golden brown and caramelized, about 15 minutes.

Toss the Brussels sprouts in olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 20-25 minutes until crispy.

On a large serving platter, shred the rotisserie chicken and layer it with the crispy Brussels sprouts, seared mushrooms, grilled corn, caramelized onions, pico de gallo, queso fresco, and pickled onion.
