Prepare the Coleslaw

Combine the Vegetables
In a large mixing bowl, add the shredded green cabbage and grated carrots.

Make the Dressing
In a separate bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and pepper until smooth.

Mix Coleslaw
Pour the dressing over the cabbage and carrots. Toss well to combine. Cover and refrigerate for at least 30 minutes to let the flavors meld.
Assemble the Sandwich

Layer the Ingredients
On a slice of bread, layer the plant-based turkey slices followed by a few slices of provolone cheese.

Add a generous portion of the prepared coleslaw on top of the provolone cheese.

Spread the Russian dressing and vegan mayonnaise on another slice of bread.
