Rinse the Rice

In a fine-mesh strainer, rinse 1 cup of long-grain white rice under cold water until the water runs clear. This removes excess starch.

Soak the Rice

In a bowl, combine the rinsed rice and 4 cups of water. Let it soak for at least 4 hours or overnight at room temperature for better flavor.

Add Cinnamon

After soaking, transfer the rice and water to a blender. Add 2 cinnamon sticks and 1 tsp of vanilla extract.

Blend the Mixture

Blend the mixture on high speed for about 1-2 minutes until smooth. The rice should be finely ground.

Strain the Mixture

Using a fine-mesh strainer or cheesecloth, strain the blended mixture into a large bowl or pitcher. Discard the solids.

Add Milk and Sugar

To the strained liquid, add 2 cups of milk and 1 cup of sugar. Stir well until the sugar is fully dissolved.

Serve

Serve over ice in tall glasses. Sprinkle with ground cinnamon to taste. Enjoy your refreshing horchata!
