Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Remove the giblets from the turkey cavity and pat the turkey dry with paper towels. Rub the entire turkey with olive oil, ensuring a good coating.

Season the Turkey
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary. Rub this seasoning mixture evenly over the turkey, inside and out.

Roast the Turkey
Place the turkey on a roasting rack in a large roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). This will take approximately 3-4 hours for a 12-14 lb turkey.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before carving. This allows the juices to redistribute.

Pull the Turkey
After resting, use two forks to pull the turkey meat into shreds. Discard the skin and bones.

Prepare the Vegetables
Wash and slice the tomato and onion into thin rings. Set aside.

Assemble the Sandwich
Take a slice of bread, spread a generous amount of mayonnaise on one side. Add a layer of pulled turkey, followed by a slice of provolone cheese, lettuce leaves, tomato slices, and onion rings. Top with another slice of bread.

Serve
Repeat the assembly for the remaining sandwiches. Cut in half if desired and serve with your favorite side.
