Prepare the Oven
Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
Mix the Wet Ingredients
In a large mixing bowl, cream together 1 cup of unsalted butter, 1 cup of brown sugar, and 1 cup of granulated sugar until light and fluffy. Add 2 large eggs and 2 tsp of vanilla extract, mixing until well combined.
Combine the Dry Ingredients
In a separate bowl, whisk together 1 cup of all-purpose flour, 1 cup of cocoa powder, 1 tsp of baking powder, and 0.5 tsp of salt.
Combine Wet and Dry Mixtures
Gradually add the dry mixture to the wet mixture, stirring until combined. Fold in 1 cup of chocolate chips.
Bake the Brookies
Pour the brookie batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool.
While the brookies are cooling, keep the oven at 350°F (175°C) or preheat it again if necessary.
In a mixing bowl, cream together 0.5 cup of unsalted butter, 0.5 cup of brown sugar, and 0.5 cup of granulated sugar until smooth. Beat in 1 large egg and 1 tsp of vanilla extract.
In another bowl, mix together 1.5 cups of all-purpose flour, 0.5 tsp of baking soda, and 0.25 tsp of salt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in 1 cup of chocolate chips.
Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until the edges are golden brown. Allow to cool on a wire rack.
