Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Rub the whole turkey with olive oil. Season generously with salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.

Roast the Turkey
Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). This will take approximately 2.5 to 3 hours for a 12-pound turkey.

Rest the Turkey
Once done, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat.

Pull the Turkey
Using two forks or your hands, pull the turkey meat into bite-sized pieces.
Coleslaw Preparation

Mix the Coleslaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Toss the Coleslaw
Toss everything together until the cabbage is well coated. Taste and adjust seasoning if necessary.

Chill the Coleslaw
Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
Assembling the Cole Turkey

Prepare the Sandwich Rolls
Slice the sandwich rolls or hoagie bread in half and lay them on a serving platter.

Layer the Ingredients
On the bottom half of each roll, place a slice of provolone cheese, followed by a generous portion of pulled turkey.

Add the Coleslaw
Top the pulled turkey with a generous scoop of coleslaw.

Spread the Sauces
Drizzle Russian dressing and mayonnaise on the top half of the rolls.

Close the sandwiches and serve immediately.
