Prepare the Meats
Thinly slice the Genoa salami, capicola, and prosciuttini into bite-sized pieces.

Slice the Cheese
Cut the provolone cheese into thin slices.

Finely chop the onions, wash and dry the lettuce, and slice the tomato into thin rounds.
Assemble the Sandwich

Prepare the Bread
Slice the Italian sub roll in half lengthwise, making sure not to cut all the way through.

Layer the Ingredients
On the bottom half of the roll, layer the meats: start with the Genoa salami, followed by the capicola, and then the prosciuttini. Add the provolone cheese on top.

On top of the cheese, add the chopped onions, followed by the lettuce and tomato slices.

Drizzle olive oil and balsamic vinegar over the top of the vegetables. Sprinkle with salt and black pepper to taste.
