Prepare the Steak
Slice the ribeye steak into thin strips against the grain to ensure tenderness.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until they are translucent, about 4-5 minutes. Add the mushrooms and cook for an additional 3-4 minutes until they are softened. If using hot or sweet peppers, add them during the last minute of cooking. Remove the vegetable mixture from the skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced steak to the skillet, season with salt and black pepper, and cook for 3-4 minutes, stirring frequently until browned and cooked to your liking.

Serve on Rolls
Spoon the cheesesteak mixture onto hoagie rolls. Serve immediately while hot.
