Tortilla Preparation

Combine Dry Ingredients

In a large bowl, mix the all-purpose flour and salt together until well combined.

Add Wet Ingredients

Add the olive oil and water to the flour mixture. Mix until the dough begins to come together.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Roll Out Tortillas

Divide the dough into 8 equal pieces. Roll each piece into a circle about 10 inches in diameter, using a rolling pin.

Cook the Tortillas

Heat a skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side or until lightly browned. Keep warm.

Filling Assembly

Prepare the Filling

In a large bowl, combine the cooked rice, black beans, shredded cheese, and shredded chicken. Mix well.

Add Fresh Ingredients

Add the shredded lettuce, sour cream, and salsa to the filling mixture. Stir until combined.

Assemble the Burrito

Place a generous amount of the filling in the center of each tortilla. Top with sliced avocado.

Fold the Burrito

Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose the filling.

Serve

Cut the burrito in half if desired and serve warm with extra salsa on the side.
