Grilling the Chicken

Prepare the Chicken

Start by marinating the chicken breasts. In a bowl, mix the olive oil, salt, and black pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.

Grill the Chicken

Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Brush BBQ sauce on both sides during the last 2 minutes of grilling.

Rest the Chicken

Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

Assembling the Salad

Prepare the Salad Base

In a large serving tray, spread the mixed greens evenly as the base.

Add the Vegetables

Layer the diced tomatoes, corn, and black beans on top of the mixed greens.

Add Grilled Chicken

Arrange the sliced grilled chicken strips over the salad base and vegetables.

Add Toppings

Sprinkle crispy cheddar onions over the top for added crunch.

Serving

Add Dressing

Drizzle chipotle ranch dressing over the assembled salad just before serving.
