Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine all-purpose flour and salt. Mix well.

  2. 2

    Add Wet Ingredients

Add olive oil and water to the dry ingredients. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth.

  4. 4

    Rest the Dough

Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

  1. 5

    Prepare the Spinach

If using fresh spinach, rinse and chop it. If using frozen, thaw and drain excess water.

  2. 6

    Mix the Filling

In a bowl, combine ricotta cheese, spinach, grated Parmesan cheese, minced garlic, nutmeg, salt, and pepper. Mix until well combined.

Assembly and Cooking

  1. 7

    Roll out the Dough

After resting, roll out the dough on a floured surface to about 1/8 inch thickness.

  2. 8

    Cut and Fill

Cut the dough into circles using a cookie cutter. Place a spoonful of filling in the center of each circle.

  3. 9

    Seal the Appetizers

Fold the dough over the filling to create a half-moon shape. Press the edges to seal.

  4. 10

    Cook the Appetizers

Heat olive oil in a skillet over medium heat. Cook the sealed appetizers for about 3-4 minutes on each side, until golden brown.

  5. 11

    Garnish and Serve

Remove from skillet, sprinkle with paprika and chopped parsley before serving.
