Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 180°C (350°F).

  2. 2

    Sauté the Vegetables

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

  3. 3

    Add Spinach

Add the fresh spinach to the skillet. Cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

  4. 4

    Mix the Filling

In a large bowl, combine the sautéed spinach and onion mixture with feta cheese, ricotta cheese, egg, salt, black pepper, and nutmeg. Mix well until combined.

Assembly

  1. 5

    Prepare the Phyllo Dough

Lay out the phyllo sheets on a clean, dry surface. Brush each sheet lightly with olive oil (about 1 tablespoon per sheet). Layer 3 sheets on top of each other.

  2. 6

    Fill the Phyllo

Place about 2-3 tablespoons of the filling at one end of the layered phyllo dough. Fold the sides over the filling and roll it up tightly to form a cylinder.

  3. 7

    Arrange on Baking Tray

Place the rolled phyllo on a baking sheet lined with parchment paper. Repeat with the remaining phyllo sheets and filling.

  4. 8

    Brush with Olive Oil

Brush the tops of the rolled phyllo with the remaining olive oil.

Baking

  1. 9

    Bake the Appetizers

Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

  2. 10

    Cool and Serve

Once baked, remove from the oven and let cool for a few minutes before serving. Cut into bite-sized pieces and serve warm.
