    Marinate the Pork

    Start by preparing the marinade. In a saucepan, combine the guajillo and ancho chilies with enough water to cover. Bring to a boil, then reduce heat and simmer for about 10 minutes until softened. Drain and blend the chilies with pineapple, garlic, oregano, cumin, vinegar, salt, and pepper until smooth.

    Prepare the Pork

    Cut the pork shoulder into chunks and place it in a large bowl. Pour the marinade over the pork, ensuring it is well coated. Cover and refrigerate for at least 4 hours, ideally overnight.

    Cook the Pork

    Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sauté until fully cooked, about 20-25 minutes, turning occasionally. Let the pork rest for a few minutes before slicing it into thin pieces.

    Warm the Tortillas

    While the pork is cooking, warm the corn tortillas on a skillet for about 30 seconds on each side until pliable.

    Assemble the Tacos

    To serve, place a few slices of cooked pork on each tortilla, then top with diced onion and chopped cilantro. Serve with refried beans and Mexican rice on the side.
