Carnitas and Fillings

Method

Cooking Instructions

  1. 1

    Marinate the Pork

In a large bowl, combine orange juice, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the pork shoulder and coat it with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Cook the Carnitas

Preheat a slow cooker or oven to 300°F (150°C). Place the marinated pork in the slow cooker or a covered Dutch oven. Cook for about 4-6 hours in the slow cooker or 3-4 hours in the oven, until the meat is tender and easily shredded.

  3. 3

    Prepare the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Set aside.

  4. 4

    Shred the Carnitas

Remove the pork from the cooker and shred it with two forks, discarding any excess fat. Return the shredded pork to the cooker and mix it with the juices.

  5. 5

    Assemble the Fajitas

Serve the carnitas with sautéed bell peppers and onions on warm flour tortillas. Accompany with Mexican rice, refried beans, pico de gallo, cheese, guacamole, and sour cream.
