    In a large skillet, melt the butter over medium heat. Add the peeled and deveined shrimp and season with salt and black pepper. Sauté until the shrimp turn pink and opaque, about 3-4 minutes. Remove shrimp from the skillet and set aside.

    In the same skillet, add the diced bell peppers and onion. Sauté for about 5 minutes until they are tender. Add the diced pineapple and cook for an additional 2 minutes.

    Pour in the heavy cream and bring to a gentle simmer. Stir in the shrimp and let it cook for another 2 minutes, allowing the flavors to meld together. Add shredded cheese and stir until melted and creamy.

    On a serving plate, arrange the shredded lettuce as a base. Spoon the shrimp and cream mixture over the lettuce. Serve with guacamole, diced tomatoes, and a side of Mexican rice.
