    Marinate the Chicken

    In a bowl, mix olive oil, lime juice, chipotle peppers, minced garlic, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

    Prepare the Onions

    Slice the onion into thin rings and set aside.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest before slicing.

    Sauté the Onions

    In a skillet, add a little olive oil and sauté the sliced onions until they are soft and slightly caramelized.

    Combine and Serve

    In the same skillet with the onions, add the sliced grilled chicken and stir to combine. Serve hot with Mexican rice, refried beans, and warm flour tortillas.
