Tamales Preparation

Prepare the Corn Husks
Soak the corn husks in warm water for at least 30 minutes until pliable.

Make the Masa Dough
In a large bowl, beat the vegetable shortening until fluffy. Gradually add masa harina, baking powder, and salt. Mix well. Slowly add broth until a soft dough forms.

Assemble the Tamales
Take a soaked corn husk and spread about 2 tablespoons of masa dough on the husk, leaving space at the edges. Add a tablespoon of shredded cheese in the center and fold the sides of the husk over the filling. Fold the bottom of the husk up to secure the filling.

Steam the Tamales
Place the tamales upright in a steamer pot. Cover with a damp cloth and steam for about 1.5 hours, adding water as needed.

Serve
Once cooked, serve the tamales with green chili sauce drizzled over the top and additional cheese if desired.
