    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in the shredded chicken or beef, salt, cumin, and black pepper. Cook for 5-7 minutes until heated through. Remove from heat and stir in chopped cilantro.

    Prepare the Tortillas

    In a separate pan, lightly warm the corn tortillas to make them pliable. You can do this by heating them for about 30 seconds on each side.

    Assemble the Enchiladas

    On each tortilla, place a portion of the filling and a sprinkle of cheese. Roll up the tortillas tightly and place them seam-side down in a baking dish.

    Add Sauce and Bake

    Pour the red enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle remaining cheese on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, let cool for a few minutes, and serve hot. Enjoy your enchiladas with additional cilantro or sour cream if desired.
