    Prepare the Potatoes

    Peel and grate the russet potatoes using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain and squeeze out any remaining moisture using a clean kitchen towel.

    Mix the Filling

    In a large bowl, combine the grated potatoes, cheddar cheese, crumbled bacon, chopped green onions, salt, and black pepper. Mix well to ensure the ingredients are evenly distributed.

    Form the Hash Browns

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Take a handful of the potato mixture and form it into a patty (about 1/2 inch thick). Place the patty in the skillet and repeat with the remaining mixture, making sure not to overcrowd the pan.

    Cook the Hash Browns

    Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy. Add more oil as needed for cooking the remaining patties.

    Remove the hash browns from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm with sour cream on the side.
