Preparation

Preheat the oven to 200°F (93°C).

Season the Roast

In a small bowl, mix together the kosher salt, black pepper, garlic powder, rosemary, thyme, and olive oil. Rub this mixture all over the prime rib roast, ensuring it is evenly coated.

Roasting

Place the seasoned prime rib on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast, not touching bone. Roast in the preheated oven until the internal temperature reaches 125°F (52°C) for medium-rare, about 4-5 hours.

Resting

Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 30 minutes before carving.

Make the Gravy

While the roast is resting, pour the beef broth into the roasting pan and scrape up any browned bits. Heat over medium heat until simmering, then strain and serve alongside the carved prime rib.
