Prepare the Fingerling Potato Hash

Preheat your oven to 400°F (200°C). Wash and slice the fingerling potatoes in half lengthwise.

Toss the potatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy. Stir occasionally.

Cook the Sirloin Steak

While the potatoes are roasting, season the sirloin steak with salt and black pepper.

Heat a skillet over medium-high heat with a little olive oil. Once hot, add the steak and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from heat and let it rest.

Fry the Eggs

In the same skillet, reduce the heat to medium and crack the eggs into the skillet. Fry until the whites are set but the yolks are still runny, about 3 minutes.

Make the Hollandaise Sauce

In a heatproof bowl, whisk together the egg yolks, lemon juice, and water. Place the bowl over a pot of simmering water (double boiler method).

Slowly whisk in melted butter until the sauce is thickened. Add cayenne pepper and season with salt to taste.

Assemble the Dish

On a plate, arrange the fingerling potato hash, top with the sliced sirloin steak, and place the fried eggs on top. Drizzle with hollandaise sauce before serving.
