Prepare the Batter

In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until a smooth batter forms.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish

Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Assemble the Sliders

Slice the slider buns in half. Spread a generous amount of tartar sauce on the bottom half of each bun. Place a piece of crispy fish on top, followed by pickles and a leaf of lettuce. Top with the other half of the bun.

Serve

Serve the sliders immediately while hot and crispy.
