Prepare the Chicken

In a bowl, marinate the chicken breasts in buttermilk for at least 1 hour (or overnight for best results).

Make the Waffle Batter

In a separate bowl, mix the waffle mix with eggs, crumbled bacon, and shredded cheddar cheese according to package instructions or your homemade recipe.

Fry the Chicken

In a deep skillet, heat oil to 350°F (175°C). Remove chicken from buttermilk, dredge in a mixture of flour, cornstarch, paprika, garlic powder, salt, and pepper. Fry chicken pieces until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Cook the Waffles

Pour waffle batter into a preheated waffle iron and cook according to manufacturer's instructions until golden brown and crispy.

Prepare Honey Butter

In a small bowl, mix softened butter and honey until well combined.

Assemble the Sammie

Layer a piece of fried chicken between two waffles. Spread blueberry jam on one waffle and drizzle maple syrup over the chicken. Top with honey butter and close the sandwich.
