Directions
Prepare the Jerk Chicken
If not using pre-cooked jerk chicken, marinate chicken pieces in jerk seasoning for at least 30 minutes. Grill or bake until fully cooked. Shred or chop into bite-sized pieces.
Assemble the Chilaquiles
In a large baking dish, layer the tortilla chips evenly. Top with the jerk chicken, salsa roja, and shredded cheddar cheese.
Bake
Preheat the oven to 350°F (175°C). Bake the assembled chilaquiles for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish
Remove from the oven and top with crumbled queso fresco, a dollop of sour cream, and chopped cilantro.
Serve
Serve immediately while hot, and enjoy your chicken chilaquiles!
