Taco Filling
- 1
Cook the Beef
In a large skillet, brown the ground beef over medium heat until fully cooked, about 5-7 minutes.
- 2
Add Seasoning
Stir in the taco seasoning and water, mixing until well combined. Bring to a simmer and let cook for an additional 5-10 minutes or until thickened.

- 4
Assemble Tacos
Once the beef mixture is ready, fill each warmed tortilla with the beef, then top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
Rice and Beans
- 5
Cook the Rice
In a medium saucepan, heat olive oil over medium heat. Add the long-grain white rice and toast for 2-3 minutes, stirring frequently.
- 6
Add Broth and Simmer
Pour in the chicken broth and add salt and pepper. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed.
- 7
Heat the Beans
While the rice is cooking, drain and rinse the canned black beans. In a small saucepan, heat the beans over medium heat until warmed through, about 5 minutes.
- 8
Garnish
Once the rice is cooked, fluff with a fork and stir in chopped cilantro. Serve alongside warmed black beans and lime wedges.
