Prepare the Tortillas
Stack the corn tortillas and cut them into triangles to create chips.
Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 2-3 minutes until golden and crispy.
Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels. Sprinkle with salt while they are still hot.

Mix the Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.
Add Lime and Season
Pour the lime juice over the mixture and add salt. Stir well to combine all ingredients.
Let it Rest
Allow the salsa to sit for at least 15 minutes at room temperature for the flavors to meld.
