Tortilla

Rice

Meat (optional)

Toppings (optional)

Method

Preparation of Rice

  1. 1

    Cook the Rice

In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

  2. 2

    Simmer

Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparation of Beans

  1. 3

    Cook the Beans

In a skillet, heat 1 tbs of olive oil over medium heat. Add 1 cup of black beans, 1 tsp of cumin, 1 tsp of garlic powder, and 1 tsp of salt.

  2. 4

    Stir and Heat

Stir to combine and cook for about 5-7 minutes until heated through. Mash slightly with a fork for a creamy texture if desired.

Preparation of Meat (if using)

  1. 5

    Cook the Meat

In another skillet, heat 1 tbs of olive oil over medium heat. Add 1 cup of ground beef or chicken and cook until browned.

  2. 6

    Add Seasoning

Stir in 1 tbs of taco seasoning and cook for an additional 2-3 minutes until well combined.

Assembling the Burrito

  1. 7

    Fill the Tortilla

Lay the large flour tortilla flat on a plate. In the center, add a scoop of rice, a scoop of seasoned beans, and, if using, a scoop of meat.

  2. 8

    Add Toppings

Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa to taste.

  3. 9

    Wrap the Burrito

Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito shape. Ensure it's tightly wrapped.
