Method

Preparing the Lamb Rack

    Marinate the Lamb

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, black pepper, cumin, and paprika. Rub this mixture all over the lamb rack and let it marinate for at least 1 hour.

    Grill the Lamb

    Preheat the grill. Once hot, place the marinated lamb rack on the grill and cook for about 20-25 minutes, turning occasionally, until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Making the Ratatouille

    Prepare the Vegetables

    Chop zucchini, eggplant, bell pepper, onion, and tomatoes into bite-sized pieces. Mince the garlic.

    Cook the Vegetables

    In a large skillet over medium heat, heat olive oil. Add garlic and onions, sauté until translucent. Add zucchini, eggplant, and bell pepper. Cook for about 5-7 minutes until softened. Add tomatoes, salt, and pepper. Simmer for 10 minutes until all vegetables are tender. Stir in fresh basil before serving.

Making the Baba Ganoush

    Preheat the oven to 400°F (200°C). Poke holes in the eggplant and roast in the oven for 30-40 minutes until soft. Let cool, then scoop out the flesh.

    In a food processor, combine roasted eggplant, tahini, garlic, lemon juice, olive oil, salt, and smoked paprika. Blend until smooth and creamy. Adjust seasoning as needed.
