Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a pan. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2 to 3 hours. Remove and let rest for 20 minutes before slicing.

Bake the Yorkshire Pudding
Preheat a muffin tin with beef tallow or vegetable oil in each cup at 425°F (220°C) for 10 minutes. Pour the batter into the hot cups and bake for 20-25 minutes until puffed and golden.

Sauté the carrots until tender and caramelized, about 15-20 minutes.
Red Wine Sauce
