Preparation

    Prepare the Steak

    Remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Season the Steak

    Pat the steak dry with paper towels. Rub the olive oil on both sides of the steak. Season generously with kosher salt, freshly ground black pepper, and garlic powder.

Cooking

    Preheat the Grill or Oven

    Preheat your grill to high heat or your oven to 450°F (232°C).

    Grill or Roast the Steak

    If grilling, place the steak on the grill and cook for about 5-6 minutes on each side for medium-rare, or until your desired doneness. If roasting, place the steak on a baking sheet and roast for 20-25 minutes for medium-rare, turning halfway through.

    Add Optional Garnish

    In the last minute of cooking, add a sprig of fresh rosemary and a tablespoon of butter on top of the steak for flavor.

Serving

    Remove the steak from the heat and let it rest for 5-10 minutes before slicing. Serve with your choice of sides.
