Beef Tartare

Crunchy Onions and Grilled Bread

Method

Beef Tartare Preparation

  1. 1

    Prepare the Beef Tartare

In a bowl, combine the finely chopped beef tenderloin with egg yolk, capers, Dijon mustard, Worcestershire sauce, parsley, salt, and pepper. Mix gently until well combined. Cover and refrigerate while preparing the aioli and onions.

Caramelized Shallot Aioli Preparation

  1. 2

    Make the Caramelized Shallot Aioli

In a skillet over medium heat, add olive oil and chopped shallots. Cook until shallots are softened and caramelized, about 10 minutes. Remove from heat and let cool. In a mixing bowl, combine the caramelized shallots with mayonnaise, lemon juice, garlic, salt, and pepper. Mix well and refrigerate until ready to serve.

Crunchy Onions and Grilled Bread Preparation

  1. 3

    Prepare Crunchy Onions

In a bowl, mix flour and salt. Dip the thinly sliced onions in cold water, then dredge in the flour mixture. Heat oil in a deep pan and fry the onions until golden and crispy. Drain on paper towels.

  2. 4

    Grill the Bread

Brush both sides of the bread slices with olive oil. Grill on medium heat until golden and crisp on both sides.

Assembly

  1. 5

    Serve the Beef Tartare

On a plate, place a generous serving of the beef tartare, top it with the caramelized shallot aioli, and garnish with crunchy onions. Serve with grilled bread on the side.
