    Prepare the Steak

    Take the bone-in striploin steak out of the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and freshly ground black pepper.

    Preheat the Pan

    Heat a heavy skillet or cast-iron pan over high heat until it’s very hot. Add the olive oil and let it heat until shimmering.

    Sear the Steak

    Place the steak in the hot skillet and sear for about 4-5 minutes on one side until a nice crust forms. Flip the steak and add the garlic cloves and rosemary to the skillet.

    Baste the Steak

    Using a spoon, baste the steak with the oil and juices from the pan while it cooks. Cook for another 4-5 minutes for medium-rare, or adjust time for your preferred doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
