    Remove the striploin steak from the refrigerator and let it come to room temperature for about 30-60 minutes before cooking. This ensures even cooking.

    Seasoning

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. Allow the seasoning to sit on the steak for about 10 minutes.

    Searing the Steak

    Heat olive oil in a cast-iron skillet over high heat until it begins to smoke. Carefully place the steak in the skillet and sear for about 4-5 minutes on one side, until a nice crust forms.

    Flipping and Adding Aromatics

    Flip the steak using tongs and add the smashed garlic cloves and rosemary to the skillet. Sear the other side for another 4-5 minutes or until the desired doneness is reached.

    Resting

    Remove the steak from the skillet and place it on a cutting board. Let it rest for at least 10 minutes to allow the juices to redistribute.
