Cooking Instructions

  1. 1

    Preparing the Steak

Remove the rib-eye steak from the refrigerator and let it come to room temperature for about 30-45 minutes. This will help it cook evenly.

  2. 2

    Seasoning

Generously season both sides of the steak with kosher salt and freshly ground black pepper. Ensure that the seasoning adheres well to the meat.

  3. 3

    Preheat the Pan

Heat a cast-iron skillet or grill pan over medium-high heat for about 5 minutes. Add olive oil to the pan and let it heat until shimmering.

  4. 4

    Cooking the Steak

Place the steak in the hot skillet. Cook for about 4-5 minutes on one side, until a nice crust forms. Flip the steak and cook for another 4-5 minutes for medium-rare, or longer to your desired doneness.

  5. 5

    Adding Flavor

If using, add a sprig of fresh rosemary to the pan during the last minute of cooking for added flavor.

  6. 6

    Resting

Remove the steak from the pan and let it rest on a cutting board for about 5-10 minutes before slicing. This allows the juices to redistribute.

  7. 7

    Serving

Slice the rib-eye against the grain and serve immediately. Enjoy your perfectly cooked, 40-day dry-aged grass-fed rib-eye!
