Preparation

    Prepare the Oysters

    Shuck the Kusshi and Beausoleil oysters and arrange them on a platter with crushed ice.

    Cook the Shrimp

    Boil the large shrimp in salted water for 2-3 minutes until cooked. Chill in ice water and serve with cocktail sauce and lemon wedges.

    Make the Tuna Tartare

    Dice the fresh tuna and avocado. In a bowl, mix tuna with soy sauce, sesame oil, chopped scallions, and lime juice. Serve in a small bowl or on a plate.

    Prepare the Cured Hamachi

    Sprinkle the hamachi fillet with sea salt and let it cure for 15 minutes. Slice thinly and garnish with fresh herbs.

    Cook the Salmon

    Season the salmon fillet with olive oil and lemon zest. Grill or pan-sear for 3-4 minutes per side until cooked through.

    Prepare the Lobster

    Boil the whole lobster for about 10-12 minutes. In a small saucepan, melt butter with minced garlic and chopped parsley. Serve lobster with garlic butter.

    Create the Seafood Tower

    Layer the prepared oysters, shrimp cocktail, tuna tartare, cured hamachi, spring salmon, and lobster on a large platter or seafood tower. Serve chilled.
