Prepare the Filling
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the rice, and cook for another 2-3 minutes until it becomes slightly translucent. Add parsley, dill, mint, lemon juice, salt, and pepper. Mix well and remove from heat. Allow to cool slightly.

Prepare the Grape Leaves
If using jarred grape leaves, rinse them in cold water to remove excess brine. If using fresh grape leaves, blanch them in boiling water for about 2 minutes until softened. Drain and lay them flat on a clean surface.

Stuff the Grape Leaves
Take a grape leaf and place it shiny side down. Place about 1-2 tablespoons of the filling near the stem end. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat until all leaves and filling are used.

Cook the Stuffed Grape Leaves
In a large pot, layer any leftover grape leaves on the bottom to prevent sticking. Arrange the stuffed grape leaves seam side down in the pot. Drizzle with the remaining olive oil and add the water or vegetable broth. Place a plate on top to keep them submerged. Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes.

Serve
Once cooked, let them cool for a few minutes before serving. Drizzle with additional lemon juice if desired.
