    Prepare the ingredients

    Slice the ribeye steak into thin strips. Chop the onion and green bell pepper, and slice the mushrooms.

    Cook the vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, bell peppers, and mushrooms. Sauté until softened, about 5-7 minutes. Season with salt and pepper to taste. Remove the vegetables from the skillet and set aside.

    Cook the steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak to the skillet. Cook for about 3-4 minutes, or until the steak is browned and cooked to your desired level of doneness. Season with salt and pepper.

    Combine steak and vegetables

    Return the sautéed vegetables to the skillet with the cooked steak. Mix well and let cook together for an additional 1-2 minutes.

    Assemble the sub

    Slice the sub rolls open and spread mayonnaise on the inside of each roll. Fill each roll with the steak and vegetable mixture. Top with American cheese slices.

    Melt the cheese

    Place the assembled subs under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, let cool slightly, then serve hot.
