    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, dried oregano, salt, and black pepper. Mix well to form a marinade.

    Marinate the Lamb

    Place the lamb shoulder in a large resealable bag. Pour the marinade over the lamb, seal the bag, and refrigerate for at least 2 hours, preferably overnight.

    Cook the Lamb

    Preheat your grill or oven to medium-high heat. Remove the lamb from the marinade and grill or roast for about 20-25 minutes per side, or until the internal temperature reaches 145°F (63°C) for medium-rare. Let it rest for 10 minutes before slicing.

    Assemble the Gyros

    Slice the cooked lamb thinly. Warm the pita breads on the grill or in a pan. Layer the shredded lettuce, diced tomatoes, sliced onions, and lamb in each pita. Top with tzatziki sauce.
